Ingredients
- 1 tbsp olive oil
- 1 tsp Allspice
- 1 tsp Cumin
- 12 chicken wings Skins on
- 1 400g tin Chopped Tomatoes Organic taste better
- 100 ml Water
- 50 grammes 85% Dark Chocolate, chopped Divine Chocolate is my preference in this recipe
- 1 tsp Salt & Pepper
- 1 tbsp Coconut Cream, whipped Optional

Instructions
- In a large heavy pan heat the olive oil and add the chicken wings, turning until browned. Should take around 5 - 10 minutes. Remove from the pan and place to one side.
- Add the allspice, cumin and chopped tomatoes to the pan and stir well, ensuring you scrape all of the cooked chicken from the pan.
- Add the chocolate and stir until well combined. Leave to simmer for 5 minutes on a low heat. Season to taste.
- Add the chicken wings back to the pan and pour in the water. Turn down the heat and simmer until the chicken wings are cooked and the sauce has reduced. Approx 20 - 25 minutes.
- Serve with a spoonful of coconut cream.
Recipe Notes
TIP: Divine chocolate has a slightly burnt, nutty flavour which compliments the strong flavour of the chicken.
