Free range eggs
Good quality instant Coffee
Slowly melt the chocolate in a glass bowl over a pan of boiling water. TIP: Remember not to let the bowl touch the water in the pan!
Add the coffee and stir until well combined.
Carefully separate the egg yolks from the whites. Whisk the egg yolks into the chocolate mixture until well beaten.
Beat the egg whites until they form ‘stiff peaks’ before gently folding into the chocolate mixture. Keep the mixture as light and airy as you can.
Spoon the mixture into glass jars, glasses or bowels and pop in the fridge for at least 12 hours.
Top with grated chocolate and a couple of beautiful juicy strawberries.
